This is a recipe Trinis use to marinate any meat or fish as it adds so much flavor.
One of the key ingredients is culantro or shadon beni which imparts a cilantro like taste.
I have found it in Asian and Caribbean markets, but failing that cilantro can be used:

  • 1 bunch of culantro
  • 10 or so cloves of garlic
  • 6 green onions
  • 1/2 a bunch of parsley
  • 6 seasoning peppers (found in Caribbean stores) but 1 cup of any sweet pepper will work
  • 1 onion
  • 2 stalks of celery
  • thyme-about 6 sprigs or more if you love thyme
  • An inch of fresh ginger
  • 1 scotch bonnet(optional)
  • 1/2 cup of lime or lemon juice or even vinegar or water
  • 1/4 cup of olive oil

Chop up veggies into smaller pieces then throw into a blender or processor with your liquids
Blend till everything is well blended adding more liquid if required
Its ready to pour over your meat or fish to marinate.

I usually freeze smaller amounts in baggies and thaw as I need it, and I usually try to marinate meats overnight but 4 hours works too.
